We recently received a note from Max in Australia to tell Nicole that while surfing the internet for a fish head soup, her recipe of the month came up. It seems that new recipes contain unheard of ingredients and require 12 days of preparation but to locate the good old fashioned basics is nearly impossible. Now this should be a lesson to Martha! |

Kim's Foil Baked Dorado Fillets of Dorado Butter Garlic White wine Dill Weed Salt -Rinse Dorado fillets and dry them very well. -Cut squares of aluminum foil large enough to accommodate individual portions of the Dorado fillets. -Melt butter in a saucepan and add finely chopped garlic. -Place each fillet in a square of aluminum and add a small drizzle of melted butter and garlic. -Add several drops of white wine. -Sprinkle with dill weed and salt to taste. -Make a tight packet place in preheated oven. The numbers on our oven dials have been washed away over the years but Kim thinks that 350° sounds about right. The cooking time is quick, not more than 12 minutes. Check one foil packet after 10 minutes and if the fish is no longer transparent, it is ready to serve. Nicole's sister Kim has given us this month's recipe. Kim is a new mom and a resident of Vallarta again after a 10-year absence. She worked in Mexico City as a model and actress and eventually incorporated the swimwear line, Ningun Pecado.
